HOLY MOTHER THIS LOOKS GOOD and IT’S BRUSSELS SPROUTS!

Shaved Brussels Sprout Salad with Red Onion, Lemon and Pecorino

Serves 6

  • ½ small red onion
  • Juice of 1 lemon
  • 1 teaspoon honey
  • 1 teaspoon whole grain mustard
  • Salt and freshly ground black pepper
  • 1 tablespoon olive oil
  • 3 cups Brussels sprouts (use larger sprouts if possible)
  • ½ cup finely grated pecorino romano
  1. Soak the onion slices in a small bowl of cold water for 15 to 20 minutes while you prepare the rest of the ingredients. Ask a question about this step.
  2. In a small bowl, whisk together the lemon juice, honey, mustard and a pinch of salt and pepper. Whisk in the olive oil until the dressing is emulsified. Set aside. Ask a question about this step.
  3. Trim all of the Brussels sprouts, cutting off any bruised outer leaves and slicing off a good portion of the hard root end. Using a mandoline, shave the sprouts one at a time. When you’re done, use your fingers to gently separate the leaves so that the shredded sprouts resemble a very fine slaw. Ask a question about this step.
  4. Put the sprouts in a serving bowl and toss gently with the onions (which you’ve now drained) and the dressing. Fold in the pecorino, taste and adjust seasonings if necessary. Serve immediately, before it starts to wilt! Ask a question about this step.

Meatless Fridays

My no snoozing and bed making for Lent has gone well thus far. So has avoiding meat on Ash Wednesday and Fridays in Lent. Okay it’s been 1.5 Fridays, but still. It’s funny how I don’t consider myself a major “meat eater” but I do eat a fair amount and have to THINK about my protein choices on Lenten Fridays.

I usually have a small turkey and hummus sandwich midday  – today I had a MorningStar Farms Blackbean Burger. God bless MorningStar Farms and their vegetarian food. I plan on having a salad with MorningStar Farms “chicken” for lunch. Later I’m going to have spaghetti squash with MorningStar Farms “italian sausage crumbles.”

Maybe MorningStar Farms will send me some free products since I gave them a bunch of shoutouts! Message me for my address 😛

Wacky Wednesday

Took yesterday off and proceeded to sleep in, run 8 glorious miles and spend the afternoon/night at the boy’s place. I had this morning off so I only came in a little while ago. Didn’t weigh in since I wasn’t home and didn’t post that today is ALL WATER WEDNESDAY! I must admit I did have a Dunkin Donuts Iced Coffee this morning since there is a DD by W’s work and I got two while I was in town. I had a 90 mile drive this morning I needed the coffee, but since then it’s been all water.

Taking a rest from running today, but still going to spin class – I’m debating going to yoga class after spin, we shall see.

Have I mentioned that I love my students are in Spring Break so I got to take time off, get things done at work the rest of the week and have my evenings to do as I please!

Gas Station Food

It took me 10 solid minutes to pick out a healthy snack on our road trip back from LSU. After being horrified* by many items I settled on a fiber one bar and a diet green tea.

*Lots of items now have the nutritional info for one serving and the entire bag. It’s crazy to see how much fat/sugar/carbs/calories can get packed into a small bag.

A student brought in like 16 Gigis cupakes today for our office. I had half of two different ones. The Red Velvet cake was the WINNER. However I am having buyers remorse. It was good at the time, but not worth it in the long run.

Good thing today is FAT Tuesday #amiright?

After a few posts from @Beckyc talking about her yummy pita pit salads I know I needed to go. I usually have a monthly lunch date with a former student-turned cross campus colleague and today we went to Pita Pit.

After lunch I looked up the nutrition – not bad. I don’t mind the fat count – I’ll take fat from avocados ANY day of the week!

I feel so full and satisfied. Oh and Monday is free drink day – so I got an unsweet tea instead of my go to (and free) water 🙂

ALL WATER WEDNESDAY

Living in Alabama and having to be outside for work (working new student orientation) in the dead of summer is just asking for heat stroke. My boss always has us have “All Water Wednesdays” before our afternoon of being outside to keep us hydrated. He will literally throw away soda, coffee, juice if he sees it. He’ll allow Gatorade or like crystal light, but his preference is for us to drink straight H2O.

Last week I mentioned that I am instituing my own ALL WATER WEDNESDAYS and encourage you all to follow suit. Some of you said you want to, but can’t part with your morning coffee/caffiene. I’m a coffee drinker too (I plan to resist on Wednesdays), but you know what – I’d rather you start your day with caffeine if you need and then spend the rest of your Wednesday only drinking water. Don’t let your caffeine addiction keep you from hydrating well on Wednesdays.
